Monk fruit sweetener is derived from a plant called Siraitia grosvenorii, native to China and Thailand. The plant’s fruit is known as Luo Han Guo. Luo Han Guo and Mogroside V are the principal sweetening components of monk fruit. It is off-white to light yellow powder and is non-nutritive.
Monk Fruit Extract is freely soluble in water, is approximately 150-250 times sweeter than sucrose and is up to 300 times sweeter than sugar. It is created by removing the seeds and skin of the fruit, crushing the fruit and collecting the juice. The fruit extract is around 200 times sweeter than sugar and contains zero calories per serving – a minimal amount provides a lot of sweetness.
As a great-tasting, all-natural, low-calorie sweetener alternative, this product has recently gained popularity in food and beverage applications such as baked goods, cereals, confections, dairy and natural products.
This sweetener contains zero calories per serving; however, some foods and beverages containing these sweeteners may contain other ingredients that add calories. An additional benefit of this all-natural sweetener is that it is said to have a better aftertaste profile than other natural options.
