Gum Acacia (also known as Gum Arabic) is a dried gummy exudation of high molecular weight polysaccharides obtained from hardened sap found on the stems and branches of acacia trees. It is highly soluble, has low viscosity and retains volatile compounds without sacrificing flavor or texture.
